planning the menu using easter left-overs

we made a honey-baked ham for easter. i can't wait to use the 'planned-overs' in soups and sandwiches. here's my supper menu next week:
monday - easy cheesy broccoli chowder with ham
long-grain rice and black beans
creamy stuffed tomatoes
yogurt
basil cinnamon mandarin oranges
tuesday - orange marmalade chili-rubbed salmon
shrimp, apple and sauerkraut quesadillas
sauteed mushrooms
blackberries
white chocolate pudding
wednesday - egg salad sandwiches
spicy white refried beans
salad with sesame ginger dressing
brussel sprouts
strawberries drizzled with balsamic vinegar
thursday - left-overs
friday - crockpot chicken straganoff with stilton crumbles
roasted butternut squash
bacony barley salad with avocado
peaches
saturday - roasted ricotta risotto
spinach and artichoke dip with pita chips
edamame
raspberries
angelfood cake triffle
sunday - scalloped potatoes and ham
steamed broccoli with almonds
banana-kiwi salad
i was also thinking of hot ham and swiss sandwiches for lunch and a pot of ham and bean soup too. what's on your menu this week?

I could never plan meals for a whole week. Good for you!0 -
I just started the crock pot for tonight's dinner. I soaked dried navy beans, rinsed them and put them in the crock pot with water. Added garlic, onions and leftover Easter ham that I cut into tiny pieces - not too much, just enough for flavoring and a little ham in each bowl. Yum! I will probably make cornbread for my family, but may not eat any depending on how my calories look by dinner time. I will also slice a few kiwis, which I think goes great with homemade bean soup. Enjoy your leftovers! I am hoping my kids finish the cake, cinnamon rolls and mashed potatoes soon. I'm not sure how long I can avoid those, but so far, so good.0

I didn't think I should eat the leftovers. I suppose I can put a small amount of ham in my breakfast egg sandwich. I have my moms deadly potato salad made w/ mayo. It's so good
My roasted veggies & broccoli should be fine. Perhaps I can make a soup out of them. Thankfully the bread rolls are gone & dessert is gone so no temptation there. The double glazed brown sugar ham however is still plentiful & calling my name. Oh the sodium & sugar made it so tasty. I didn't have more than a slice though.
