Easy Black Bean Chili w/ Steak & Chorizo

So, I wanted to throw together a crock pot full of chili for my husband and I to eat this weekend so we don't spend a bunch of money on eating out up until the holiday meals. I wanted to go outside of my normal box, so I decided to add some chorizo & use black beans, but keep it crazy simple too. Here you go! Makes 8 big servings.

1 bag dried black beans, rinsed
1 large can fire roasted tomatoes
1 medium yellow onion, chopped
1 Tbsp. extra virgin olive oil
1 Tbsp. minced garlic
1-2 lbs. london broil, cut into 3/4" pieces
2 links chorizo (out of casing)
1 tsp. kosher salt
1 tsp. black pepper
1 tsp. cumin
1/2 tsp. chili powder
approximately 3 cups water

1. Heat oil in pan over medium/high heat. Add onion & garlic, saute for a couple of minutes. Add chorizo, cook until lightly browned.

2. Meanwhile, add beans, water, steak and tomatoes to crock pot. Add chorizo, onion & garlic mixture. Stir together, add salt, pepper, cumin & chili powder.

3. Cook for about 6 hours on high or 8 hours on low.

4. Serve with optional toppings, sour cream, cheese, cilantro, diced jalapeno, etc. Cornbread makes a nice side as well!
