Vegetarian vegetable/noodle soup

1 Pea soup
boil green peas in vegetable broth (frozen is fine, dried it good too but takes a lot longer)
add diced onion
add mint (I use a peppermint tea bag)
2 lentil soup
saute some onion, garlic, ginger and cumin
add 3 cups of water
1 cup of red lentils
a bit of salt and chili pepper to taste
bring to a boil and simmer for 20 minutes
3 kitchen sink soup
1 large can of v8
lots of diced veggies - carrot, celery, onion, green pepper, mushroom, kale, whatever you like or whatever you have in your fridge
4 butternut squash soup
bake or boil a squash
blend with vegetable broth, a bit of cocounut milk and curry powder
heat again

I really like to make a Shrimp veggie soup, but I add the shrimp last second so they don't overcook. Just leave them out!
1 Box Swanson Veggie broth
2 Tbsp Minced Garlic
1/2 cup of the following veggies - Broccoli, Onion, Cauliflower, Baby Carrot, Zuchini, Yellow Squash. All Rough Chopped
1 Cup Lentils
1 Jalapeno halved then chopped
White Pepper, Cumin, Garlic Powder, Onion Powder to taste.
Throw everybody into the pool and add water as needed. Simmer until Lentils reach desired doneness. (about 25-30 minutes)
Best thing is, you can seperate out your own and add any chicken/shrimp as you see fit.
Broth ends up very rich and slightly spicy due to the Jalapeno. If your not a fan of spice, take out the seeds/ribs of the Pepper.

Just made a great vegetarian French onion soup in the crockpot yesterday! Whoa yum! Check out the Crocktober-break out your crockpot thread that is still active. I posted several veggie items and I saw several others as well. I make:
Tomato soup with Israeli couscous or orzo
Vegetable-barley soup (with sweet potato)
Lentil-sweet potato-carrot soup
Minestrone
Several kinds of vegetarian chili
Broccoli soup
Black bean soup (if you search PD vegetarian black bean soup on this site-it is Amazing)
White bean soup with onions and sage (very cool if you serve in a roasted butternut squash)

One other quick note: I use Better than Bullion vegetable broth, and I think it really adds a depth of flavor to my vegetarian soups.0

Yes, I have to say there is a night/day difference between the better than billion and a carton/can of broth, or even the broth you may make on the stove or in the crockpot from veg leftovers ( like ends of onion, celery, carrot, etc.) I used to always make my own, but I picked this up for a shortcut and really like it. I have not tried the not-chicken or whatever the beef flavor is called, they don't sell them here...0 -
I have a recipe for vegetable soup he might like!
Ingredients: 1 bottle V8 juice, 2 cans veggie broth, 1-2 cans stewed tomatoes, potatoes, zucchini, broccoli, carrots, peas, string beans, corn and cabbage(or any veggies he likes this is just what I add to it)
Directions(easy!): cut up veggies like potatoes carrots etc and add to the V8 veggie broth mix except cabbage. When the thicker veggies are fork tender add the cabbage and cook for a few extra minutes. It takes about 35 minutes to make and it's really yummy. Enjoy! Also, adding minced garlic gives it a good flavor as well0 -
Just confused by what you mean by "vegetarian". It seems as if you are mocking the idea of vegetarianism. As a lifelon vegetarian (as in, from birth) I'm a little offended.0

Better than bullion as a base for everything
Pat of butter, diced onion and garlic browned then some BTB. Add carrots celery and whatever appeals to you. I like barley and/or lentils. Add s water, simmer and devour. Spices that go well include herbs de Provence, bay leaves, garam masala or oregano. You can add potatoes or beans or pasta too. Even a splash of pesto will make it delicious. Play around with it. With butter and onion it rarely goes wrong.
