I'm wanting to try my best to follow my trainer's meal plan he made out for me and was wondering if anyone has some ways I could cook chicken to change it up?

*sliced chicken breasts with cooked-onion-bell pepper- corn- mushrooms.. this taste sooooo good!!
*you can make a chicken breast soup.. low sodium chicken broth- corn- diced tomatoes- wheat noodles- sliced celery- sliced carrots- diced onion.. I LOVE THAT!
* sooo many things with chicken.. ok u can get kellogs corn flakes- crunch it up really tiny- put chicken breasts in egg white wash- and coat it with the corn flakes/spices and put it in the oven!!!

You can cut skinless,boneless chicken breasts, onions and bell peppers into cubes and marinate it in some plain yogurt with fresh ginger, garlic, a good squeeze of lemon juice, cumin, chilli powder(if you want some heat) and leave it to marinate overnight. Before cooking add salt.
Then bake in oven or grill on a pan brushed with some oil.
Add loads of onion and bell pepper cubes to increase your veggie intake too.
I sometimes even add a tsp of oil in the marinade, but thats optional.0 -

1. we make our own 'kfc', coat in flour, wgg and fine polenta mixed with herbs (1 teaspoon each of ground oregano, chili powder, ground sage, dried basil, dried marjoram, pepper, onion salt, garlic powder, 2 teaspoons salt, paprika), spray with cooking oil spray and bake in moderate oven 30-40 mins.
2. lebanese chicken - stir fry strips of chicken breast, stir in 2 T sweet chilli sauce, cucumber strips and tub lf natural yoghurt. Serve w pitas, salad and/or rice.

Soak 1 pound raw diced into bite size chicken in skim milk and the juice of half a lemon season the milk with salt, garlic and onion powder.
While chicken is soaking prepare some salsa: 4 or 5 ripe plum tomatoes, 1 medium purple onion, 4 garlic cloves.1/2 bell pepper, 1 jalapeno (no seeds or membrane) dice everything VERY finely. Simmer for 5 minutes. Add 1/4 cup chopped cilantro. Simmer 10 more minutes. Add salt, garlic and onion powder to taste. Turn off burner, add another 1/4 cup chopped fresh cilantro and stir it in and leave pot on hot burner. If you're feeling lazy you can buy store bought salsa but this stuff is sooooooooo much tastier.
ok, after chicken has been soaking for about an hour drain off the milk and pat a bit with a paper towel. Heat a large skillet and put a bit of oil in the bottom of the pan or spray with pam. dump chicken in the pan, while chicken is browning, add: 2T chili powder, 1t garlic powder, 1t onion powder, 1 t cumin, a sprinkle of oregano, some salt. stir and brown meat until most of the pieces are cooked through. DON'T overcook. Add a cup or two of your salsa and continue cooking for a few more minutes. Add some more chopped cilantro if you love cilantro. Taste.... if you feel it needs more seasoning then feel free to add more.
Serve in a bowl with long romaine lettuce leaves on the side. fill the leaves with meat and eat like a taco. You yield about one "taco" for each ounce of meat you are eating. If you want, and you have some calories to spare, you can add a bit of diced avocado or plain yogurt as a topping. OMG these are out of this world delicious and you feel like you're cheating, but you're not.... ALSO, if you're counting calories, make sure you count the seasonings. Chili powder and garlic powder both have carbs, protein, AND calories so just don't forget to include them.
With whatever left over salsa you have, you can add some salt to it and a little lime juice if you want. and eat it with kale chips. Trust me on this... it's GOOOOOOOOD.
Also the lebanese chicken posted in the above post is AWESOME. If you're watching your carbs, you can eat this in a romaine lettuce leaf instead of a pita and eat it with some fattoush or tabouleh instead of rice. YUMMMMMMMMEEEEEEEE!0 -
Take some mini fillets (chicken tenders) bash them up a bit and coat with dijon mustard, fresh ground pepper and a little oil.. mix it all up really well and leave to marinade, I find it best to fry these (no more oil necessary) on a high heat, just a few minutes each side, they will be golden brown and deliciously tender.
I served with baked sweet potato wedges (season with hot smoke paprika), green veg (asparagus, green beans and sugar snaps) and some thick greek yoghurt (entirely optional, entirely delicious)0 -

in a deep pan, sautee some onion and garlic. then add some chicken broth and some water. add some spices and a couple of bay leaves. bring to a boil, and then put the chicken breasts into the liquid (make sure they are completely covered. simmer and cover it for about 10-15 minutes, and then turn the heat off and let it continue to cook in the hot liquid for another 10-15 minutes.
you can serve warm and over rice and vegtables, or refrigerate it for later.
i like to take the left over liquid and use it for when i make rice the next time.0 -
Equal amounts of A1 and lemon juice in a tureen, two teaspoons of Worchestershire sauce. Marinate chicken in the fridge for two days, then bake. Tasty!0

Brown chicken thighs with garlic. You'll need a scant amount of oil if the skin has been removed. Toss in a small can of coke (regular, not diet) and a few lashings of soy sauce. Boil with the lid off until chicken is done, and sauce has thickened and caramelized. About 45 minutes for thighs. Maybe 30-35 if you do breasts instead.0 -
