Where to get good calories?

I am diabetic so really have to cut out almost all carbs. That leaves fat and protein for my calorie pool (I think). I don't want to up my fat too much but I'm having trouble with finding enough protein in a day.

I typically have egg whites for breakfast (4, scrambled with some cheese).
Lunch varies quite a but often soup or a sandwich.
Dinner is typically grilled chicken, port or fish with mixed veggies.
Apples are my main snack food, sometimes nuts.

Sometimes I bolster my calorie count with a protein shake.

So my calories have been coming out about 1000 short of my 2000 calorie goal. I feel like that to raise that I'll be eating all the time. So where is a good high-calorie protein source with enough variety to not get boring?

    Hubby is in the midst of chemo treatments and was told to increase his protei, but not much tastes good to him. I've been making him high protein smoothies with Greek yogurt (Kirkland brand is pretty low sugar), protein powder, peanut butter, frozen banana slices and a little milk.

    Nuts! And try to up your potions on your other protein sources. Also, fat is fine as long as it's from olive oil, avocados, flax seed, and most nuts. I've read about diets over 30% fat (like a high fat Mediterranean diet) that are rated very high for nutrition. You can also make delicious mug cakes that are low carb and practically all protein.

    Thank you very much for the advice! It feels odd to have to eat more volume of food to achieve the same calories as my previous bad diet.

    Try avacadoes super high in calories and fats but they are healthy fats, i eat a avacado almost every day. They are creamy and just nom nom nom delicous. From what you wrote you pretty much want to eat the same way that I currently eat. My meals are almost always raw (so salads) i up the calories by adding in 1 full egg some days or if i dare 2 avacadoes, most of the time i just have more chicken though.

    Greek yogurt, cottage cheese, egg whites, protien powder, peanut butter, also - google some receipes that you can make with protien powder. Some of tehm are delicsious!

    sorry about the bump i was comming back to read it... I would eat chicken and lots of nuts i too am trying to eat more protein and not so much carbs..
