Gluten Free Deserts?

anyone have some pretty simple gluten free deserts that aren't going to ruin the diet?

  • I like to change out regular flours for GF ones like quinoa or tapioca flour. You can find a lot of good recipes at skinnytaste.com. good luck!

    chickpea apple cake, chickpea chocolate cupcakes (google but chickpeas replace the flour- its usually 4 eggs-19-27oz of chickpeas, 1tsp of baking powder and what ever flavor you want to do (apple, chocolate, cherry etc....)

    medjool dates stuffed with mascarpone & candied pecans (or chocolate chips). All natural and freakishly delicious!

    Baked apples

    Per person

    An apple
    A few berries of your choice, cranberry is good
    A couple of chopped nuts
    1 tsp honey or agave syrup
    1/2 teaspoon butter or coconut oil
    Pinch spice of your choice (cinnamon, allspice, ginger etc)

    Using an apple corer or sharp knife, hollow out a narrow hole in the middle of the apple, starting at the end opposite the stalk (basically, core the apple, bottom up, but leave the stalk end intact- so you can fill the hollow without the filling falling out).

    Using a sharp knife, score the apple in one continuous line round the middle (stops the apple bursting when cooked).

    Fill the hollow with berries, nuts and spice. Pour in agave/honey and place butter/coconut oil on top.

    Transfer apples to a baking tin or dish. Bake in a 200C over for 30-40 minutes.

    Sorry, feeling lame today!!

    You can make yourself some yummy GF choc mousse with GF dark chocolate, egg whites, sugar and greek yogurt :)

    Otherwise check your local Whole foods market or grocery store health food section, heaps of companies make GF desserts :)

    Some of my favorites

    PB2 Fudge
    1 Tablespoon PB2
    1 teaspoon cocoa powder
    1 tablespoon Almond Milk

    2 Tablespoons Chai Seeds
    1 Cup Almond Milk
    (Chia seeds swell and make this tapicoa like pudding)

    (Great GF cheesecake crust, if you don't also have a dairy allergy this would work with a normal cheesecake too.)

    Banana Pudding
    1 Banana squished into goo
    1 Teaspoon Carob Powder

    Ice Cream
    1 Frozen Banana (Cut into coins before frozen)
    4 Frozen Strawberries
    4oz of Coconut Milk

    As far as prepackaged 'Dr. Judy's cookie's,' White Chocolate Chip Cliff Crunch Bars (gluten free and sweet enough to be a dessert.) Enjoy Life Gluten Free Brownies, also there are several chocolates are are gluten free (but it's worth checking a quick google to see if anyone reacts to them before buying.)

    Meringues and all variations of meringues. Souffles can be made without flour as well. Black bean brownies. Those chickpea cookies posted earlier.

    Gluten Free Peanut Butter Truffle Cookies
    Makes 24 - 30 cookies

    Minutes to Prepare: 10
    Minutes to Cook: 10
    Number of Servings: 24

    Ingredients-
    1 cup creamy peanut butter
    1 cup brown sugar, firmly packed
    1 large egg
    1 teaspoon baking soda
    1/2 cup semi-sweet chocolate chips

    Directions-
    -Preheat oven to 350.
    -Combine all ingredients except chips until well blended (seriously, my cookies still had some sugar graininess).
    -Add chips.
    -Drop slightly rounded teaspoonfulls on ungreased cookie sheets (12 to a sheet) - do not flatten.
    -Bake 10 minutes or until puffed and golden. Cool on wire rack for at least 5 minutes before removing from cookie sheet (they will be very soft).
