Vietnamese Seafood Pho
My pho is assembled in 3 stages. Stage 1 is the bowl, stage 2 is the broth, stage 3 is the assembly.
For stage 1, prepare the separate ingredients, then layer into your bowl. If you don't want to use seafood, cook it separately then add to the bowl.
When making the broth, add all the ingredients except Snow Peas and eggs. Simmer for 10-15 minutes. When the flavors come together, add the pea pods for 2-4 minutes. After the peas start to soften, beat your 2 eggs together and slowly stir into the broth until it resembles egg drop soup consistency (1-1.5 minutes)
Stage 1:
8 oz Shiritaki noodles, rinsed and dry fried
1/2 cup bean sprouts
3 thin sliced onions
1/3 cup mushrooms quartered
1/3 cup fresh spinich chopped
1/4 cup green onion
1/2 cup immitation krab
10 large shrimp precooked

Stage 2:
8 cups (2 containers) reduced sodium chicken broth
2 inches fresh ground ginger
1/3 cup minced carrot
2 jalapeno diced
1 medium onion diced
3 tablespoon garlic
1 package snow peas
2 eggs beaten
Salt and White Pepper to taste

Stage 3:
Pour broth over top of ingredients in bowl and enjoy!

I don't have all the specific numbers, but for this huge bowl, it is less than 350 calories.
Also, all the ingredients in stage 1 is a single serving where as the broth is enough for 4 servings
