What's your favourite healthy meal?

Because man, I need some ideas! I'm in an absolute rut and I need some ideas, and I hear man cannot live by bacon alone ;)

    Chicken with roast carrots and butternut squash, peas and broccoli. Sometimes sweet potato mash. Or fishcake instead of chicken.

    I also like jacket potato with tuna and salad.
  • That sounds good :) I've been eating a lot of fresh pasta recently - need to stop that, the calories are insane.

    Baked fish (with lemon juice, pepper, salt)
    Sauteed greens (with garlic, EVOO, salt, pepper)
    Baked or boiled and mashed squash, baked sweet potato, baked brown rice, pretty much any starch. If you do boiled & mashed butternut squash, the whole meal is about 20min to make
  • I eat this every day

    1 flat out light wrap (italian herb)
    1 oz of shredded cheese (any kind)
    .5 oz spinach
    between 1.5-2 oz of grilled chicken
    and .5 tbsp of catalina fat free dressing...

    I totally love it!! I eat it at least once everyday, sometimes more!

    This is how much of a rut I'm in - I forgot about the very existence of brown rice :/

    As for wraps - definitely going to get some of those :)

    Skinless boneless chicken breast cooked in lemon juice with a couple tbs of bbq sauce.
    Cooked broccoli.
    Cut up "fried" (in 1 tbs of olive oil.. but I feed a family of 5, so it's not a lot ) seasoned red potatoes with a couple tbs of reduced sugar heinz ketchup. (I'm a ketchup fanatic......)

    Accommodated to your portions for your calories of course.

    I don't know what it is about that dinner, but when I make it.. I scarf it down and am so happy afterwards.

    I usually do some sort of sauteed vegetables (I get them at work, so it's a blend of carrots, broccoli, cabbage, edamame, peppers, onions, zucchini, and squash) and I'll toss that into something. Sometimes I'll make tuna or chicken on the side, or toss the veggies into pasta or rice, and use a cream of something soup. Just toss it all in and make it delicious.

    I use the hell out of my spice cabinet. Helps alot :)

    Casserole is good too - meat, carrots, swede, parsnips, leeks, sweet potato etc and a stock cube and leave to cook on the stove. Easy to make and not much to wash up after.

    Sweet potatoe and Black Bean chili

    Olive Oil - Extra Virgin, 1 Tablespoons
    2 1/2 cups water
    Sweet Potato - 1 large diced
    Onions - Raw, 1 medium diced
    S&W - Premium Black Beans, 50% Less Sodium, 2 cans
    Hunt's - Tomato Sauce 15 oz (62g), 1 can
    Spices - Ground Cumin, 4 tsp
    Garlic Cloves, Minced, 3 clove
    Spices - Chili powder, 2 tbsp

    Saute sweet potatoe and onion in olive oil until onion is transparent. Add water and spices and simmer for about 15 minutes until sweet potatoe are soft. Add remaining ingredients and simmer for another 5-10 minutes. Garnish with fresh cilantro and sour cream... I've also added shredded cheese. Very yummy. Serves 6 ( 1 1/2 cup sevings) 219 calories (w/o sour cream and cheese).

    I love a nice mixed green salad with salmon on top and pour over that some of my homemade low fat dill dressing or other light dressing. I also like to use cut up chicken breasts if I'm out of salmon. I eat this at least 3 to 4x's a week. LOVE IT!!

    (Vegetarian/Vegan)

    Breakfast: Oatmeal cooked with unsweetened almond milk, flaxseed, chia seed, apple sauce, and sliced banana. Topped with cinnamon, agave nectar, raisins, and slivered almonds.
    Lunch: Spinach, cucumber, sprouts, avocado, tomato, and roasted red pepper hummus on whole grain bread. Add feta if desired. Celery and carrots or homemade baked sweet potato chips on the side.
    Dinner: Spinach/Spring Mix, dried cranberry, toasted walnuts, celery, and sliced gala apple salad with fat-free raspberry vinaigrette. Add feta if desired. If you want to get real fancy throw in some sliced jicama.

    All easy, all amazing, all healthy.

    Greek Chicken Burgers
    1lb lean gr chicken
    1/2 C Feta
    1/4 C Italian bread crumbs
    little season salt, pepper, powder onion and garlic to taste
    Grill up however you choose, foreman, Skillet, Grill... Makes 4
    aprox 240 cal 12 fat 9 carb

    Top with tzatziki sauce

    Fage - Plain Non-Fat Greek Yogurt, 6 oz.
    Cucumber - Peeled, raw, 0.5 medium
    Spices - Dill weed, fresh, 2.5 sprigs
    Realemon - Lemon Juice, 3 teaspoon
    Spices - Garlic powder, 2 tsp
    Spice Classics - Onion Salt, 1 tsp
    Daisy - Light Sour Cream, 2 Tbsp (30g)
    about 8 servings
    aprox 21 cal 0 fat and 2 carb


    I dont use any bread just eat it plain with the sauce and some steamed veggies of choice!

    Favorite Healthy Meals:

    Breakfast
    1.) Whole wheat waffle w/half cup berries and two tsp of SF Syrup
    2.) Bagel Thin (or half of a bagel if I feel like it) light cream cheese and a slice of tomato with salt and pepper
    3.) Scrambled egg (or egg whites if I have them ready) with whatever veggies are left in the fridge (broccoli, spinach, mushrooms, etc)

    Lunch
    1.) Spinach, nuts and berries with a little feta and balsamic vinagrette
    2.) Any kind of creative sandwich; Tuna and Artichoke (no mayo) little oil, little bit of herbs. Or hummus, fetta, cucumbers, roasted peppers and spinach.

    Dinner
    1.) Good meat, roasted or grilled with super fresh veggies (the combos are endless) I am loving roasted brussel sprouts with balsamic right now.
    2) I love a good Mediterranean restaurant, so I usually get the fish and have a salad and maybe a little rice.
