healthy potato soup

Ooooh butternut soup is the best!

My recipe:

2 Medium butternut
2 medium potatoes
3 teaspoons of cayenne pepper
1 onion
1.5ltr vegetable/chicken stock.

so fry the onions and cayenne pepper in a little oil. Then add the diced butternut and potatoes into the pan and sweat for 10 minutes or so. Then add the vegetable stock and simmer until soft. You can either blend it once done to have a smooth consistency, but I use a potato masher because I like the rough texture. Add salt and pepper to taste.

But you could also have carrot and coriander which is delicious. Chicken and sweetcorn soup is also a favourite of mine.
