Southwestern Lasagna (big piece ~370 cals) veggie

I make terrible lasagna, but this one turns out wonderful and is quite low in calories - and I don't skimp on the cheese :p

I found this recipe in an "Edina Family Center Favorite Recipes" cookbook.

It is made in a 9x13 pan and I calculated it for only 8 slices, so they are very large!

Ingrediants
1 jar (24oz) spaghetti sauce
~2 cups (or 1 15oz can) corn
~2 cups (15oz can) black beans
1 packet taco seasoning sauce
1 tub (~ 2 cups) cottage cheese (I used 2% milkfat)
2 cups shredded cheese (I used 2% milkfat)
7oz lasagna noodles - that was 6 full noodles and 2 noodles that were about 3/4 size, to fit the pan


Mix first 4 ingredients together. Spoon some into the bottom of a 9x13 pan. Coat each side of the lasagna noodles with cottage cheese and layer half of them. Top with half of the sauce then half the cheese. Repeat for one more layer.

Bake at 375 for 40 minutes, covered. Uncover and cook for another 5-10 minutes until cheese is melted. Let sit for about 10 minutes.
