Black Bean Quinoa Patties

After looking at a few different black bean burger recipes yesterday, I threw caution to the wind and added quinoa to the mix. I made 14 patties out of the following recipe for a total of: 83 cal/14 carb/.6 fat/4 protein/3.5 fiber.

2 cans (trader joes organic) black beans rinsed
1/2 yellow onion
1/2 green bellpepper
1 egg
2/3 cup quinoa
3 cloves garlic
~1/5 cup italian bread crumbs
cumin and chili powder to taste
salt to taste

Put quinoa in water and microwave until it "pops" and the little tails come out. It took about 2 minutes in my microwave. Drain and place quinoa on a papertowel to dry out a bit.

Mash beans with a fork to make a chunky paste.

In a food processor or by hand, chop onion, pepper and garlic into small bits, add egg and whip up. Add beans and mix up. Slowly add bread crumbs until thick enough to form a patty that holds together.

On a parchment paper lined cookie sheet, place about a 1/4 cup sized dollup and smash down into shape. This stuff is sticky and making the patties by hand was not worth it. Mine were about 3-4" wide, 1/2" thick.

Bake on 400 for 10 minutes, flip and bake for another 7-10.

Let cool and eat! Or put in tupperware to store for the week like I did.
