I ended up with extra meat tonight (long story) and prepared it over low heat with some EVOO, garlic, onion, and fresh herbs. Lemon juice always gives it a kick too.

Today, my coworker invited several of us to her apartment for lunch to eat Beef Barley Lentil Soup that she made in a crock pot. It was delicious. She told me that she got the recipe here and the nutrician facts look pretty good:

I make chicken taco meat with my crockpot on a regular basis and it always gets rave reviews! My 2 and 4 year olds love it too.
Put desired amount of boneless, skinless chicken breasts into the crockpot (I always put them in straight from the freezer). Top with low-sodium taco seasoning and about 1/2 of a medium jar of salsa. Cook on low for 6-8 hours. Shred the chicken about 30 minutes before serving. Serve in low cal tortillas with traditional taco fixings, or make taco salad. I love it on lettuce with reduced fat cheese, black olives, a few crushed tortilla chips, and fat free sour cream!
