Breakfast Burritos with Ham, Onions, Green Peppers and Mushr
4 large eggs
1/4 cup nonfat milk
3/4 cup diced ham
1/4 cup diced onion
1/4 cup green pepper
4 oz can of mushrooms - I use fresh
2 oz shredded cheese - low fat
12 6" flour tortillas
Salsa, optional
Spray a large nonstick skillet with low fat cooking spray.
Saute ham, onions, peppers and mushrooms until tender.
Beat eggs and milk together in bowl;
pour into skillet.
Stir and scramble the egg mixture until cooked.
Meanwhile, heat tortillas in microwave.
Spoon mixture between 12 tortillas,
Top with shredded cheese.
This makes 12 servings so you can pop them in the freezer for a rainy day.... sooooo filling...

I usually have this for breakfast, except I use egg beaters and a low carb wheat tortillia. The southwestern flavored egg beaters is even better!0

I'm a huge egg beaters fan too. Love all the flavors, especially the cheese and chive. Make breakfast prep so much faster!0

Looks like a nice change for breakfast! Wow, very cool you can freeze them? :drinker: You assemble them and then even the cheese you add in freezes fine?

Yes, take it out the night before to defrost then heat in microwave untill the egg has heated through.....good if your on the go which most mornings I am.....and the kids love them.......xx0

I do something very similar, except I use chicken instead of ham. . . Reminds me of a ChickFilA breakfast burrito.
