Chicken and White Bean Chili Recipe

Hello all! I have a great recipe for chicken and white bean chili that I thought I should share since I am obsessed, as is my boyfriend. It is very low in fat and calories, high in fiber and protein, and it is already entered in the MFP food idex as "Carolyns Chilean Chile". I make it at least once a week, and honestly, the next day, it tastes even better.
Ingredients:
2 boneless skinless chicken breasts
2 cans white beans 15 oz (drain juice into cup/bowl on the side)
2 cans diced tomatoes 15 oz
1 large green bell pepper
1 medium white or yellow onion
6 garlic cloves
1/2 cup fresh cilantro
1/4 cup olive oil
3 tbsp chili powder
1 tbsp tomato paste
1 tbsp ground cumin
1 tsp oregano
salt and pepper
Directions:
Cut thawed chicken into bite size pieces. set aside.
In a large pot, add olive oil, on medium heat, add onion, garlic, and bell pepper.
Once the veggies are soft, about 5 minutes, add chicken, salt and pepper, and sautee until the chicken is no longer pink. around 5 minutes.
Add beans, 1 cup of bean juice, canned tomatoes, tomato paste, chili powder, oregano, and ground cumin.
cook through until chili is thick (around 25 minutes)
Add cilantro just before serving
ENJOY!!
I serve mine with either chips and some sour cream or garlic bread, but it tastes great just by itself.
