Cooked vegetables - BLERK! :sick:
I eat them because I know I should, but would quite happily never eat another if I could get away with it.

most people don't like veggies because they are taught to cook the crap out of them and I personally can't stand frozen or canned.
A great easy way to make veggies a little tastier is to use chicken broth for cooking instead of plain water and rice vinegar is great on veggies too.0 -
I prefer to eat carrots, peas, & broccoli raw. Can't stand cooked carrots or peas.0

My husband hates pretty much all veggies unless I force them on him. I love pretty much all veggies cooked/steamed/raw whatever.0

Experiment with seasonings. It makes them a little more interesting. I LOVE cooked vegetables in the crock pot so they cook in with the meat juices. YUM. If you can put up with the texture of course... it does get mushy.0

I used to hate cooked vegetables because growing up we always had them out of the can, or out of the freezer. We'd heat them up in the microwave or in a pot of boiling water, and then put on a little salt and some butter.
Now I use them IN other things. When I make pasta, I sautee some fresh veggies (or actually frozen works for this) and put them in the sauce. My favorites for that are mushrooms, green peppers, and spinach. Delicious. Also broccoli and carrots or pretty much anything will work.
I think, by far, my favorite way to eat vegetables is in shish kabob form. I like red onions, cherry tomatoes, zucchini, yellow squash, mushrooms, and peppers and put them all on a stick. You can maranade them in some italian dressing, and maybe add some chicken. Then, put them on the grill. It's so good, especially in the summer.0 -

I love all vegetables as long as they are fresh (I will eat a few frozen) Try lightly brushing your veggies with olive oil, sprinkle on some seasons or just salt and pepper and roast in the oven. Asparagus is awesome roasted. I put chopped garlic in olive oil and let it sit for about 30 minutes then brush it on the asparagus lightly, add salt and pepper and roast on 400 for about 15 minutes. Just before it is done I sprinkle lightly with fresh Parmesan cheese. Delicious!0

Take a zucinni, slice it long ways down the middle. Spray "I can't believe it's butter" on it, (or put some low fat type parmesean/garlic dressing on them) then sprinkle a little bit of parmesean cheese on it with some pepper. Bake/brown them for like 20 minutes on a very hot setting (or less if you like them more crips) I like them more browned so I broil them. THEY ARE SO DANG GOOD! You'll like them! I do the same thing with asparagus and mushrooms and I chop up onions and mix that in too. Lisa Veggies don't have to suck.0

I am not a vegetable person either,, so i supplement as much as i can with V8 juice,,, it is better than nothing...0

For a quick fix for fresh asparagus, I steam it in the micro on 80% so it stays a little crispy. Then I spray a little Wishbone Spritzers balsamic vinaigrette dressing on it. Yummy!! Also, shredded Parmesan or sharp cheddar is good on asparagus, with or without the spray.
I like to put a little shredded cheese on broccoli or cauliflower also. Love my veggies. Even my dogs like veggies. They consider raw baby carrots a "treat.":laugh: :laugh:0 -
Frozen are fresher than the veggies at the grocery store they have been picked shipped and stored. Frozen are picked flash frozen and stored usually with-in 48 hours. Or if you have a local farmers market a lot of them are picked daily. They are the freshest. Yams or sweet potatoes are yummy I boil or bake them put a little butter then add cinnamon or you can even forget the butter. If you use baby carrots they are sweeter than large carrots. I don't put much on my veggies I like the natural flavor. Except for brussel sprouts (gag)0

Brussel sprouts, fresh or frozen are wonderful, if you do this:
Steam them. then add some shredded parmesan on them and a little smart balance or a dab of butter. A little won't wreck your eating plan and the flavor is phenomenal.0 -
Eat 'em raw! It's better for you! I love a plate of sliced raw veggies and a dollop of hummus for dipping.0

Love the cinnamon with the sweet potatoes. Try making homemade sweet potato "fries" slice into french fry sized strips, toss with a little canola oil, cinnamon and cumin. Roast for 20-30 minutes. I eat these weekly in the winter! For summertime, try cutting a few different veggies the same size and marinating them with a balsamic vinaigrette and grilling them. So good with some brown rice and grilled tofu. Sorry I'm a vegetarian, I guess you could grill some chicken if you don't like tofu (lol)0 -

i am a weirdi i cant stand raw vegetables but love them cooked all of them!! YUM!! and i hate all fruit which is really bad, i have enormous texture problems and fobias i love the flavors of all fruits i suck on them but if they touch the back of my tongue i gag. i love the juices but then everyone shakes their finger at me and says thats not as good for me0

I don't eat many vegetables, well not many cooked vegetables only corn & potatoes. No cooked green veggies though. But I do cook all kinds of veggies for my husband, he loves all of them.0

Ahh. My favorite subject. I too barely tolerated vegetables. My daughter kept telling me, "Roast them." Finally, I listened. :noway: Now I love vegetables. Really. They're one of my favorites. But...big but...I only like them roasted. I spray a little olive oil on them and put them in a 475 oven for 10-15 minutes. 10 or less works for asparagus. Mini peppers, onions, broccoli, etc. are best with a few more minutes. If you roast zucchini (which is still not a favorite! ) 5 minutes or so works well. Season them however you like. Delish.
I actually feel indulgent and extravagant about what I eat. That's a first on any diet. And it's working. When I feel the munchies coming on, I fix myself a big tray of roasted veggies. Honestly, it takes away all the desire for munchies. On the other hand, if I let myself get too hungry and don't have veggies (or fruit...that works too but is a little more calorific), snacks are way too seductive. :grumble:
Give it a try. It works! I had to hear how good roasted veggies were for a year or so before I finally tried fixing them. I'm glad I did! Cheers! :drinker:0 -

Grill 'em Put them on kebabs with meat and a heavy dose of spices and you'll love them in no time! Same goes for roasting. Use olive oil or [real] butter on them, lightly brown the edges. Good stuff.
Or try slicing squahes, zucchini, sweet potatoes, or carrots very thin with a mandoline slicer, add a bit of EVOO and sea salt, throw them in the oven and you'll end up with a crispy chip-like veggie. Very good with hummus or pesto. This works well with kale, also. If you bake it it turns into a sort-of chip.0 -
I love throwing anything in the oven in a glass dish with olive oil and some Garlic Season All and baking them for 20 minutes. I've been eating my asparagus this week and it's divine. It's also great for broccoli or green beans. Also, try stir frying!! Get a frozen bag of stir fry or make your own with a bunch of combined vegetables. Pan fry it in olive oil or canola oil on the stove for 10-15 minutes at high heat with some chicken and steak seasoning, then pour a serving over some brown or white rice.0

How can anyone say they hate all vegetables? i just don't get it. Vegetables are such a diverse subject, and you can't have a truly healthy diet without them. As you can clearly see, there is a huge range of kinds of vegetables as well as ways to prepare them. Trust me, there's a recipe out there for everyone. For all the vegetable haters: Don't look at it as an old habit or the way you were brought up. Just look at eating vegetables as something that is necessary for health and can actually taste ENJOYABLE if you put in some effort to finding recipes that work for you. I know i would not be able to get through the day without vegetables b.c i rely on them to fill me up without spending most of my calories.0

With sweet potatoes we have been putting Watkins cinnamon cream sprinkles on them. I am sure they are sugar but you use so little and it adds so much flavor, yummy. And I love most veggies, roasting them, grilling them, steaming them, anything but canned.0
