Alcohol in food

I have a question. When I cook with alcohol, for example wine, vodka or wiskey, the alcohol vanishes when you cook it - only the tast stays. But what happen to the calories - do they stay or vanish too?

Calories don't cook out of food, so count them. Only some of the alcohol evaporates- not all.

Yep - the calories from alcoholic beverages come from the sugar, which of course doesn't evaporate when heated.

Yeah, I was guessing it's like that. But it never hurts to ask, just to be sure.

Some of the calories from alcoholic beverages CAN come from sugar, but they also come in the form of alcohol itself.

    Carbs: 4 cals/g
    Protein: 4 cals/g
    Alcohol: 7 cals/g
    Fat: 9 cals/g

I don't know why MFP doesn't let us track alcohol grams. A LOT of my calories come from alcohol.:drinker:

MFP tracks alcohol as carbs which isn't quite true. Alcohol is the 4th macro. All my dry wines and meads have NO sugar.
The calories come from the alcohol.

ETA: There are a few residual unfermentable sugars which give wine and beer "mouthfeel".

It doesn't really. Lots of alcohols have sugars in them, and that's probably what you're seeing. If you look up the official MFP entry for plain vodka, you'll see that it has 69 calories and 0 carbs (or any other macros) because plain vodka has no sugar in it. Wine, Beer, flavored vodkas, etc all have legitimate carbs separate from the alcohol calories.

I stand corrected. It just has a calorie entry, and I should have remembered this as I had to correct a few beers and add the carb value in. That said, it is the 4th macro.

Some of the calories come from alcohol (~7 a gram) and some from sugars (~4 a gram). You can boil or burn off all the alcohol and so lose those calories but you need to make an effort to ensure it is all gone, keep the lid off and get a high enough temperature. You may well not get rid of the alcohol if you are slow cooking or if you keep a lid on as the alcohol will condense back. Choose a dry drink for cooking not a sweet one, it won't have no sugar but it will have fewer.

Just count the calories, or don't. Either way, I can't imagine any recipes or ways of cooking with alcohol that the number of calories from grams of alcohol would be significant in your overall diet. If they are, you might be drinking.
  • I don't know about you, but I have a hard- almost impossible- time

It doesn't let you track alochol as a macro (which is is one) like protein, carbs, fat.

My friend cooked the soup yesterday and was totally upset because she put accidently to much whisky in. But we (other friend and me) really liked with the more of whisky. I'll ask her for the recipe and will post it. ;-)

It doesn't let you track alochol as a macro (which is is one) like protein, carbs, fat.

It's not listed on nutritional labels (at least here in the US) except for the rare voluntary listing. Alcohol nutritional labeling is actually something that we might start seeing in the future, though. I suspect if it starts being a requirement to label, then we'd be able to track it (like trans fat). As of now, it would be pointless to have a tracker for it, because there's no information available to populate it.

If only....Same reason as above- the companies aren't required to provide that info, so they don't. If you stick to the basics you can find 'official' reliable entries- like the plain vodka one I mentioned earlier- but if you're going with specialty drinks like cake flavored vodka, you're kind of on your own.

    Here comes the recipe:

    4-5 sweet potatos
    2 cellery
    1 smal chilli
    2 onions
    1,5 -2l vegetable stock

Cut everything in smal pieces and put it with vegetable stock in a pot. cook it untill everything is squashy, add tomato juice and puree it with a blender. Heat it again, add creme fraiche, cinamon and nutmeg and at the end 4cl (we had 12l). Bon appetite!
