Meatless meals

I am on a quest to add some meatless meals to my menu's. Right now we seem to eat meat at every dinner, unless we are having pasta. I made a black bean and rice casserole this week that was good, but I need more recipes :smile: Please share what you have. Thanks!!!

    * you can make it even yummier if you add zero fat low cal yoghurt (to simulate the cream and butter typically used).

    Here's a crockpot one I found online awhile ago and we love it.

    Lentil, Corn and Sweet Pepper Chili

    1 large onion, finely chopped
    1 (28-oz.) can crushed tomatoes
    1 cup low-sodium vegetable broth
    1 1/2 cups lentils, picked over and rinsed
    2 cups fresh or frozen corn kernels
    1 large red bell pepper, chopped
    1 (4 1/2-oz.) can chopped green chilies, drained
    1/2 cup shredded carrots
    1 tsp. ground cumin
    1 tsp. ground coriander
    1/2 tsp. salt

    Add all ingredients to crock pot and cook on low for 8 hours.

    I added the shredded carrots to the original recipe. It's an excellent one for adding more veggies or beans or whatever. I usually add garlic to mine as well.

    If you aren't considering eggs meat, I make a scramble that is SO GOOD.

    Half an onion, diced
    1 can chopped green chiles
    1/2 cup shredded carrot
    6 eggs
    Whatever spices you want- I do pepper, cumin, a little nutmeg and garlic powder.

    Carmelize the onions then add the green chiles and carrots. Whisk the eggs with the spices and pour over the vegetables. Scramble to your liking. Serve with a little cheese. I usually serve them with roasted sweet potato wedges. You can easily add chopped spinach or kale, leeks, even broccoli or cauliflower to it. Super easy and yummy!
