my boyfriend and i got a membership with a co-op and our first produce basket included a few things that i don't like - such as beets and cabbage. i had hoped to be able to give the beets away because i had no idea what i could do with the damn things, but then i figured i'd get creative and sneak them into some chocolate cupcakes. this isn't exactly a new or far fetched idea seeing as red velvet cake was originally made with beets. i also made the recipe without any oil or butter, so there is only 3g of fat (and about 164 calories) per cupcake before frosting. i decided not to go super low fat on the frosting that i made, and instead opted to go reduced sugar because i think frosting should be pretty rich and decadent. i made a whipped chocolate mousse style frosting that has about 3g of sugar per serving (and 83 calories).
honestly i soooort of expected this to be a total disaster that the cupcakes would be pretty gross since i don't like beets. i was wrong though! they are actually just really nice chocolate cupcakes. the tops puffed up beautifully and they are firm enough to hold and eat without making a mess, but they are also incredibly moist and not too sweet. when eating the cake on it's own there is a very subtle earthy flavor that the beets lend to the overall taste, but it's not gross or vegetal. once the frosting was slathered on top i didn't notice at all.
i'm pleasantly surprised.
