Healthy & quick lunch ideas?

Hi! I'm trying to plan out meals for the week, and I am out of ideas for lunches. I'm a stay-at-home mom, so I don't have to worry about portability, but I do need things that are quick (or can be prepped in advance). Ideally I would like to feed my daughter the same thing as I'm eating - she's not a very picky eater, but salads don't work for a 3 year old - but I could do variations for each of us. I don't eat eggs or pork, but otherwise I'm willing to try almost anything. THANKS! :)

    I think fat free soup is a good one as you can have it without feeling guilty.

    Lots of warm water every half hour.

    Frozen berries.

    Fat free stir fry.

    I make a lunch for my kid each night and often double it so I can have same thing. PBJ, hummus/pickles, tofu cream cheese/pumpkin butter, improve the texture of some drier whole grain breads when they wait for a few hours before eating. Carrots and celery, radishes and snap peas, leftover vegetables, all go into recycled yogurt cups at the beginning of the week.

    Here are a few of our favorites:

    How about a wrap...cream cheese with spinach and bell peppers and any other veggie you like.

    You can also fill crescent rolls with seasoned ground beef or turkey, shredded cheese, diced tomato and onion then bake as indicated on the can. Serve with salsa or taco sauce.

    Or add turkey pepperoni and some string cheese to a crescent roll and then bake. Serve with marinara.

    Mix shredded chicken with an avocado (instead of mayo) to make a pretty decent chicken salad. Add seasoning as you like.

    * I usually choose reduced fat cheese and cream cheese, and the extra lean ground beef.

    Ooh, filling up crescent rolls sounds really yummy. And definitely 3 year old friendly. :) I never think to do wraps, but that's a good idea too. I don't do mayo (since I don't eat eggs), but sometimes I use guac as a sandwich spread. Might have to pick up some wraps at the store this week too.

    We do canned soup a few days a week since it's so quick and easy, and there's a lot of variety. PB & J is a staple here as well. I'm not a very good cook (I need a recipe!) so I never just try to improvise a stir fry. But if someone has a recipe I would love to try it - they are yummy (when other people make them! LOL!)

    My family loves the filled crescent rolls. The possibilities are endless and they freeze well. I get a lot of ideas off of Pinterest and skinnytaste.com.
