Your diary isn't publically viewable, so it would be difficult to make practical suggestions based on what you're already eating.
Given your request, i.e. being a Celiac, and wanting a comparatively high intake of protein while avoiding the grains you need to avoid, you seem to be in a pretty good position to do something Paleo-ish. This would mean (reasonably lean) meat, fish, eggs, vegetables, fruits, and possibly some tubers (sweet potatoes, potatoes). If you're looking to up your protein intake, it'd be as simple as including meat, fish, or eggs for every major meal, and then eating enough vegetables/fruit (and again, maybe some tubers) to keep you full. You can pretty easily find a crapload of paleo type recipes online, if you are interested in going that route, and it is a pretty simple way of eating.0 -
I have thought about going paleo, but that will be a slow change...if I could afford to eat salmon everyday, I would.0

Why not try Primal which is Paleo with dairy.0

Cottage cheese, plain greek yogurt, chicken breast, canned tuna, quinoa, and lentils are your friend. Use the plain greek yogurt like you would sour cream.
One specific dish would be and Indian chicken curry with greek yogurt. Very yummy.0
