Light Ground Beef Recipes

I know its not the most diet friendly meat, but I have and it and don't want to throw it out. Does anyone have any good family friendly recipes that use ground beef that they wouldn't mind sharing?

    I eat ground beef, nothing wrong with fitting it into your calories for the day.

    Chili
    tacos
    spaghetti served over spaghetti squash is a new favorite of mine
    stuffed peppers

    not necessarily a recipe but a tip: after you pan fry your ground beef, rinse it in a colander with warm water. gets the fat off. put it back in the pan and add your seasoning. difficult to log the calories you lose here, but what counts is what you actually put in your body, not what your diary says. I made italian and mexican lasagna over the weekend that were each about 360 calories per serving. Recipes came out of my head, though.
  • Chili is one I use because you can actually make a very healthy and filling dish filled with fiber and lots of good stuff!!
    I put beans, peppers, corn, and spinach in mine. You wont even taste the spinach:)
    I just make sure I drain as much fat from the meat after I have cooked it.
  • Make some chilli burgers!

    Add some chopped spring onions, cumin, chilli powder and oregano and mix all together with your hands mushing it all together! Then shape into burgers and serve them in small pitta bread pockets with some low fat cheese and a side salad.... Yummy :)

    I'm a beef eater, so I use ground beef a lot. I buy the leanest they have. It's easy to portion out and then freeze to use later. Because it's just me, I do quick easy meals, like tacos, taco salad, and I love a good burger. I love my George Foreman grill too. But instead of a bun, I like using english muffins and I jazz up the burger with spinach, onion, tomato and anything from mushroom to avocado and jalepanos.

    Lettuce wraps.

    Sautee ground beef with minced garlic, onions & shredded carrots. Season with garlic salt & pepper. Add a couple of teaspoons of low sodium soy sauce. Get a head of Boston lettuce, rinse off a few leafs. Add about half of cup of the ground beef mixture. I squeezed lemon on mine before wrapping up and eating. So yummy!!

    Yes, it's a serious tip. If you're putting it in spaghetti sauce, chili, lasagna, etc. it really doesn't matter. You're adding other flavors and moisture. I certainly wouldn't rinse a hamburger pattie. Gross.

    Yes, it's a serious tip. If you're putting it in spaghetti sauce, chili, lasagna, etc. it really doesn't matter. You're adding other flavors and moisture. I certainly wouldn't rinse a hamburger pattie. Gross.

    Don't delude yourself into thinking it doesn't matter when making a ragu or chili, fat = flavor

    I have washed my meat in a colindar for years.....I cannot stand to eat something that is swimming in grease. The seasonings adds the flavor.
  • Tacos are the best with a great salsa & healthy veggies you can set that ground beef free indeed! Tasty! LOL you can even do a Taco salad brown your beef & a light salt Taco seasoning or fresh veggies & make a salsa Fresh romaine lettuce tomatoes green onion & just add the works of your favorite veggies! GOOD LUCK!

    hmmm... I generally add herbs and spices to get more flavor.

    You do realize that you cross-contaminate your meat with bacteria when you do this, right? You also lower the temperature of the meat creating an even greater risk of exposure (yes, even when its cooked). Also, the fat in beef is not all bad. Beef has a lot of healthy fats that your body needs to regulate the hormones that make you feel hungry.

    If you don't know how to deduct the calories from the recipe because you rinsed it, then why bother.

    And to answer the OP's question... chili can be made exceptionally healthy. Meat, in general, is not a high calorie food and tomatoes and beans are loaded with potassium.

    All good ideas. I eat ground beef regularly! Its really not all that bad on the calories if you go for 93/7 or 90/10

    Some other ideas:

    meatballs
    burgers
    lasagna (can use butternut squash or zucchini if low on cals)
    casseroles

    grilled burgers (no bun)... dipped in A1 sauce... YUM!
