Steamed Tacos

I finally had some "tacos al vapor" (steamed tacos) from a street-side cart while we waited in line on the international bridge, coming back from Mexico. For one reason or another, after years visiting Mexico, I hadn't tried them until now.

The conclusion? Superb. They are fried a smidge, then stacked in a steam pot. We had some of each variety that was offered: pinto beans, potatoes with chicharron (pork rind), and potato with picadillo (ground beef and veg). They're messy, but delicious -- almost like a tamale/taco fusion. Don't pass up the chance to try these.

Calories? Macros? No idea. It was Sunday. :bigsmile:

    Mine were a lot soggier than these, but delicious.. A bowl and fork would have been great. They came with pickled whole serrano chiles and carrot spears. Damn good stuff.

    Then, there are tamalitos. Take your masa, after having added a bit of red chile sauce for color and taste, and roll it into a long tube about 2 inches thick. Then, cut it into discs. Take those masa discs and fry them until they're crisp. Drain, pat dry and cover in red chile salsa, shredded cabbage and tomato spears. They're like tamale chips. :love:

    Now those I'm going to have to try! I love tamales, but hate the work to make them.
    You miss out on the filling, but it is much less time- and labor-consuming. Also, I love crunchy, so it's a big winner.

    Once I realized how simple tamales were to make (time notwhithstanding), I have put them in to regular rotation at home.


    Now I need to make tomalitos!!

    Excellent!

    Pro Tip: We use a piece of cut-up and washed plastic grocery bag to help in the rolling-up-and-keeping-shape step.

    ETA: These are only common to parts of northern Mexico. If you Google "tamalitos" or ask for them at a Mexican restaurant, you'll likely get regular tamales.

    How does one steam a taco? Just workout extra hard?
