Green Soup + ways to eat more greens?

I love spinach, but I have never been a fan of kale or collard greens. But I know these are full of goodness so I have been experimenting with ways to prepare them that I like. Just this evening, I tried this "Green Soup" recipe from the Splendid Table, and it came out so well that I wanted to give it a shout out. It was creamy and filling, but very low calorie (I modified it slightly and ended up with <150 calories per serving). Best of all, I think I'm finally going to be hitting my calcium goals for a change!

Does anyone else have recipes suggestions to help make greens more palatable?

    I just made a pizza tonight with kale pesto! It was really tasty, so are baked kale chips! I haven't tried green smoothies yet but I hear a lot of good things about them

    Sautée Kale with onions peppers and garlic (you may add shrimp) with a touch of sea salt
    Serve over a bed or brown rice and there you've got it - A nutrient packed meal!

    I too was listening to The Splendid Table and heard the guest, Anna Thomas, talking about this green soup! I am so glad to hear that you tried it and liked it. I am going to give it a go. In fact, I ordered her cookbook called "Love Soup" and I am excited to try more of her recipes.

    I think this makes the third time in a week that I've heard someone mention green smoothies. They must be better than they sound, I'll have to try them!
