I made this the other night and it was a huge hit and so easy to do!

4 chicken breasts
can of reduced sodium black beans
can of reduced sodium kidney beans
2 cans of diced tomatoes with green chilies
1 small can of tomato sauce
1 package of reduced sodium taco seasoning
10oz. of frozen corn
1tbsp cumin, 1tbsp chili powder

stir all together in crockpot and cook on low for 10 hours or high for 6 hours. Take chicken out 30 minutes before done and shred and stick back in crockpot.

This is a awesome receipe. I got it over at Skinnytaste.com. Can be a little runny so what I did the second time i made it was double up tomatoe paste and remove slow cooker top for the last hour of cook time.

I just finished my lunch portion which only had 203 calories for a 10oz serving.

That's where I got it, as well! I have yet to find a recipe from that site that I do not like!

  • Bump - thanks
  • I used to make this often, but got bored of the chicken breast, i switch it up and use ground chicken and turkey sometimes.
