yummy southwestern cold rice salad

I started throwing these ingredients together and every time I make it it tastes better and better!. It is healthy, filling and if you don't overdue the helpings, it's somewhat low calorie.I find it is a great snack if you get hungry between meals and just can't wait. A small portion is very satisfying. I am not putting specific amounts, because it is to your liking.

Cooked brown rice (chill)
chopped green pepper
chopped sweet onion
black beans
whole kernal corn
cherry tomatoes (cut in half)
chopped fresh cilantro

Toss all ingredients together and add a dressing of olive oil, salt, pepper and lime juice. I love the lime taste so I do a lot of lime juice. Go easy on the olive oil...it's 120 calories per Tablespoon.
