couscous stuffed peppers

ok so I was looking for a yummy variation to stuffed peppers and this is what i came up with
The recipe can make 4-8 whole peppers.
4-8 bell peppers( i used a variety~ yellow, red, orange and green)
1 box original couscous(made according to directions but without butter or oil
1/2 lb-1 lb lean ground turkey
1 can no sodium black beans(rinsed thoroughly and drained)
1 can no sodium corn (or you can use fresh corn on the cob removing the kernals)
1/2 packet low sodium taco seasoning or you could use your own seasoning such as cumin, chili powder, cayenne, garlic and black pepper.
1 tbsp dry minced onion(or fresh onion if you prefer
brown meat and add seasoning and minced onion..cook about 5 mins for flavors to mesh.
in a seperate pan heat 2 cups of water, add dry coucous and remove from heat(ready in 5 minutes)
add desired amount of meat/bean/ and corn to couscous.
Fill peppers and bake at 350 for 30-60 mins depending on desired doneness of peppers.
If you make only 4 peppers you will have alot of filling left over which can be enjoyed as is.

I made this exact same thing last night! Except I didn't use beans/corn .. instead added mushrooms! I used some garlic powder and onion powder for seasoning.0
