I know I am having ground turkey for dinner. But can't seem to think of what to make besides meatballs. I want to try something new. Any good recipe ideas

    My friend does a great food blog, here is one of my FAVORITE recipes off her site made with ground turkey...so stinkin' good.


    Enchilada Casserole

    Servings: 4

    Amount per serving: 309 calories– 23g carbs– 16g fat (kinda high in fat, but the protein makes up for it!)– 35g protein

    Ingredients:

    1/2 lb ground turkey (97/3)
    1/2 onion diced
    1 cup salsa
    1/2 of a 16 oz container fat-free refried beans
    1 tablespoon taco seasoning
    1 teaspoon cayenne pepper (optional, but it adds a lot of flavor!)
    2 soft taco sized tortillas (I used La Banderita)
    1/2 cup plain Greek yogurt
    1 cup 2% shredded cheddar cheese
    2 tablespoons dried cilantro
    1/4 cup black olives (optional)

    Directions

    -Preheat the oven for 400 degrees.
    -On the stovetop, cook the ground turkey and onion. Mix in the taco seasoning and cayenne.
    - In a large bowl, mix the turkey/onion mixture with the beans, Greek Yogurt, and salsa.
    S-coop half of the mixture into a 9″ pie dish. Top with 1/2 cup cheese, then put the tortillas on top of the cheese.
    -Scoop the remaining mixture on top of the tortillas, then add the rest of the cheese.
    -Bake for 15 minutes, add cilantro, and bake for another 5.
    -Split into 4 and enjoy!

    Really you can do ANYTHING with ground turkey that you do with ground beef :) The key is "seasoning". I've bn a ground turkey user for some years now...you can have gr8t burgers, meat sauce, tacos...it's endless. I did a meat loaf a while back and it was AWESOME! I seasoned it well, added green peppers and red onion, bread crumbs, and even mixed in bar b que sauces with the ground turkey bf shaping to bake. Totally AWESOME! The key is "portion control" when you consume it. Good luck!

    Tex Mex Ground Turkey Potato Boats. Delicious!

    Ingredients:
    2 Potatoes baked
    1/2 lb ground turkey
    1/2 cup onion chopped
    1 each Clove garlic minced
    1 Can (8 ounces) stewed tomatoes
    1 tsp chili powder
    1/4 tsp dried oregano
    1/4 tsp cumin
    1/4 tsp red pepper flakes
    1/4 tsp salt
    1/2 cup reduced-fat Cheddar cheese grated

    Directions:

    1. Preheat oven to 375 degrees.
    2. Bake potatoes per instructions. To shorten the length of time to bake the potatoes, place whole potato in microwave and cook on high for 10 - 15 minutes or until potato begins to soften. Finishing baking in the oven to crisp up the skins.
    3. Remove potatoes from oven and let cool slightly.
    4. Slice potatoes in half, lengthwise and place on a baking sheet.
    5. Scoop out center of potato leaving about 1/4 inch of potato attached to the skin.
    6. Keep scooped out potatoes for another use.
    7. In medium skillet on medium-high heat, combine ground turkey, onion and garlic.
    8. Cook for approximately 5 minutes or until meat is no longer pink.
    9. Drain meat juices. Add tomatoes, chili powder, oregano, cumin, red pepper flakes and salt.
    10. Cook for another 15 minutes or until most of the liquid has evaporated.
    11. Spoon the turkey mixture into the potato shells and sprinkle with cheese.
    12. Place backing sheet into oven and bake for 15 minutes or until cheese is melted.

    Around 230 calories per serving and 6g of fat.

    Taco casserole:
    All cans are low/no sodium

    1 can diced tomatoes with liquid
    1 can corn with liquid
    1 can black beans rinsed and drained
    1 can green chiles
    1 lb ground beef or turkey browned
    3 cups cooked rice of choice
    2 zucchini, sliced
    minced garlic
    minced onion
    salt/pepper to taste
    chicken broth to make mixture the desired consistency, and to cook the zucchini if the canned liquids aren't enough.
    Mrs. Dash Southwest Chipolte AND Carribean Citrus AND/OR Fiesta Lime salt free seasonings to taste

    Combine all ingredients in a large pan and simmer until the zucchini is tender.
    Sprinkle with mexican style shredded cheese and tabasco to taste.

    yum!

    ETA: You could replace the rice with quinoa for a higher protein option.
