Is homemade chicken stock low cal?

I made a chicken in my crock pot a while ago. I just put the bird in the pot and cook for 5 hours without adding any liquid or anything at all. WHen I was done I had about 2 1/2 cups of wonderful stock. I put in tupperware and stuck it in the freezer. When I thawed it out all the fat was at the top so i threw it away and was left with this wonderful broth (although it is kinda gelly like). anyway I made a soup that called for a can of fat free chicken broth and I used my stock instead> Did I just screw up?!?!?!

    As long as you skimmed the fat, you're fine.

  • I make my own stock all the time. I normally buy whole chickens and just break them down for whatever I'm making and then use the discarded carcass for stock. The most I do before cooking it is removing as much of the skin and fat that I can. Once I have my stock, I toss it in the fridge overnight, remove any fat layer that might have accumulated on top the next morning, then toss it in the freezer.

    So far, it seems to have worked just fine.
