108 cal Chinese Style Hot & Sour Soup - Yum!

I just made this soup and so quick and delicious. I eliminated the corn flour so it's not the same consistency as the chinese soup but felt I didn't need it and is less cals now! It took about 15 mins for prep and cooking time and absolutely delicious. Really, really easy and cheap and yummy. I ended up having two bowls because it was so tasty.

Tesco - Fantail Prawns, 1 container (250 gs ea.) 180 0 2 38 0 0
Tesco - Chestnut Mushrooms Hand Picked Daily, 1 container (250 gs ea.) 40 3 1 5 1 0
Tesco - Vegetable & Beansprout Stir Fry 350g, 1 container (350 gs ea.) 130 18 2 7 13 0
Kingfisher - Sliced Bamboo Shoots In Water, 1 container (120 gs ea.) 16 1 0 2 1 0
Soy sauce, 1 tbsp 8 1 0 1 0 902
Tesco - Toasted Sesame Oil, 2 tbsp 270 0 30 0 0 0
Morrisons - White Wine Vinegar, 90 ml 18 0 0 0 0 0

Tesco - Tomato Puree, 30 g 28 5 0 1 5 60

Basically:
Ingredients:
Bag of stir fry vegetables
tin of bamboo shoots
1/2 bunch of spring onions (sliced)
punnet of chestnut mushroom (sliced)
2 eggs (whisked)
2 heaped tablespoons tomato puree
5 chicken stock cubes
3 tablespoons chilli paste
9 tablespoons rice white vinegar
1 tablespoon soy sauce
2 tablespoons sesame oil
I added a bag of prawns - but if your cutting down costs you could quite happily eliminate, it takes nice with/without them.
Could also add a mixture of meats/fish if you wish.
You literally fry the spring onion and mushrooms in the sesame oil, just so it's turned and then add everything else in except eggs (and prawns if using) - top up with water (about 2-3 pints, depending on how far you want it to go and flavour). boil for 5 mins and then add prawns, cook for a further 3-4 mins and then stir the soup while pouring in the whisked egg - done, yum!!!

I would guess at about 2-3 days! I planned on chicken, vegetables and homemade tomato sauce for dinner but ended up having 2 more bowls of the soup! Very yummy and so filling because of the liquid and vegetables. My partner, my daughter and a friend had some too so not much left now. x0 -
