Paula Deen French Toast
Hi! Someone has posted "Paula Deens Baked French Toast Casserole - Lightened Version" on the food database and I am wondering how you lightened it? Was it good? I made it today and figured out that 1/15 of her recipe had almost 1000 calories in it! YIKES!!!!!

Hmm, I 'm not the one who posted it, but after looking at the recipe, here's what I think you can do to make it less decadent:
1. Use a low calorie bread. I've found a couple of whole wheat breads at my supermarket that are 35 calories per slice. If you let them go a little stale, they make better french toast because they wont' fall apart in the egg mixture.
2. speaking of egge - use only the whites, or at least only 4 whole eggs and the rest in egg whites
3. Use low fat (2%) milk and maybe some fat-free creamer
4. Skip the praline topping, and use a sugar-free pancake syrup instead
5. Make the raspberry topping with sugar-free perserves
Dang, now I want french toast for breakfast tomorrow instead of my usual oatmeal!!:grumble:0 -
That sound pretty good, but I gotta say, the praline topping makes it. Without that it is just regular french toast. I guess I could try using Country Crock instead of butter, that would be good.

yeah, I know what you mean - I learned about a year ago that brown sugar + butter = caramel (aka my favorite topping ever!) I've been using Smart Balance instead of butter, which does help a little, and it provides "healthy" fats. Maybe you should just plan on doing super mega workout after eating this, and keep an eye on your HRM so you know when to stop exercising! :laugh:0

not my recipe either, but....i would suggest going further- instead of butter- brummel & brown is made from yogurt and only 35 calories in a tablespoon. splenda does a brown sugar blend that has reduced calories.
you still will want to calculate the calories (sparkpeople is great). i'd use fat free half & half, still rich & creamy and egg beaters (though you'll need to brace yourself for the sodium amounts).
i still haven't figured out why Paula isn't the size of a mini-van. my husband and i still laugh about the time we watched her coat potato wedges in mayonnaise roll them in potato chips and deep fry them. seriously, just frying isnt' enough calories??!!
i'm sure the full on french toast is heaven (and all my daily calories plus some in one meal)0
