Muffins/Cupcakes

I love, love, love muffins & cupcakes. Having them with coffee as a mid morening or mid afternoon treat is brilliant. Probably hence why I got this chunky in the first place!
I love baking them as much as eating them.

Has anybody got any tried and tested low fat muffins or cupcake recipes they would like to share with me?

  • Try a 3-2-1 cake! Take 1 box of Angel Food Cake mix and 1 box of any other mix you want, and combine the mixes in a tupperware container/plastic bag.

    3 tablespoons of the combined mixes
    2 tablespoons of water
    1 minute in the microwave

    BAM you have a cute little cupcake! I do a lemon one, and I add mini chocolate chips and powdered sugar. The cake is around 90 calories and delishhh :)

    They are 132 calories a piece and are a great breakfast with coffee! I even brought them to work and no one knew that
    they were healthy and they ate them all up! :laugh:

    Please, for me, don't ruin a real muffin or a real cupcake for something "healthy". Just have one and fit it into your calories. I grabbed one yesterday looking forward to munching down on a chocolate muffin that I snagged from some left over meeting, and much to my dismay, someone decided that we all needed to be healthy and I bit into a very bland make shift chocolate muffin.

    It was sad.

    I almost cried.

    i love one can of pumpkin puree w/ one box spice cake mix. 24 cupcakes at like 126 cal/per. I topped them w/ a tbsp cinnamon cool whip and they were delightful

    Try making mini cupcakes or muffins, then it's fewer calories per muffin/cupcake

    instead of the oil and eggs, I puree black beans in chocolate muffin mix. numnum and people can't usually tell the difference

    They have some awesome recipies on sparkpeople. com. The blueberry muffins are really good; made with applesauce, buttermilk and whole wheat flour; end up being about 130 calories each. Even ;my picky grandson loves eating them.

    angel food cake mix contains powdered egg whites, so nope!

    Bump! Baking is my weakness too! The banana oatmeal muffins are good though. Look on pinterest! :)

    It is one box of Devils Food Chocolate Cake Mix and one can of Pumkin puree....mix (batter is thick) bake at 350...these are about 100 calories each and are delicious with a cup of hot coffee!

    One day, at maintenance, this will be doable... for now, unless I exercise a lot, I don't usually have the spare calories for a 300+ cupcake unless I take it from a meal where I actually need to be eating nutritious, filling foods.

    Here's a great almond flour muffin. They are yummy. 185 calories or so:

    ALMOND FLOUR MUFFINS (GLUTEN FREE/PALEO)
    2 1/2 CUPS ALMOND FLOUR
    1/2 TSP CELTIC SEA SALT
    1/2 TSP BAKING SODA
    1/4 CUP RAW HONEY
    3 LARGE EGGS
    1 TBS VANILLA

    Mix dry ingredients in large bowl. Mix wet ingredients in another.
    Pour wet ingredients into bowl with dry ingredients and whisk or mix well.
    Add 1 cup of fruit or fruit and nuts.
    I mix mine....1/2 banana plus 1/2 c. strawberries or blueberries. My sister makes morning glory muffins: coconut flakes, grated carrots, walnuts & apple (a cup of all combined). For fall, I've used pumpkin, nuts and chocolate chips.
    I bake mine at 325 degrees for 32 minutes. You may need to adjust your time and temperature for your oven.

    how about the 2 ingredient cupcakes.

    box of angel food cake, can of pumpkin puree. mix together bake. YUM!!!!!!

    add some flaxseed meal (1 tablespoon plus 3 tablespoons water equals 1 egg) and you get good for you flax in your yummy cupcake.
