I need some new ideas on veggie side dishes!

Options
I have been doing really well this month with eating more veggies, but I'm starting to get bored with the boiled broccoli and steamed bland veggies. Does anyone have any other recipes or ideas for veggie side dishes? Thanks

    My favorite is cauliflower roasted in my toaster oven with olive oil and a little bit of garlic powder and salt. Roast until it starts to brown. Truly delicious!

    Cube up butternut squash, slice up some mushrooms, toss in some raw pepitas (pumpkin seeds). Toss the mix with some olive oil, smoked paprika, a little salt & pepper, and spread it on a cookie sheet. Roast in the oven at around 350 or so for 30 minutes, or until the squash is tender and your kitchen smells amazing.

    Roast veggies with a drizzle of olive oil and some spices. I like cauliflower with cumin, butternut squash with cinnamon, and broccoli with 5 spice powder.

    brussels sprouts, steamed then broiled with salt, pepper, olive oil
    mushrooms and tomatoes, fried in olive oil
    beets! boiled for 45 min with olive oil, salt, pepper and balsamic vinegar or wrapped in foil and roasted for 1 hr
    baked sweet potato (or microwave) with cinnamon, butter, nutmeg
