Healthy 2 Ingredient Pumpkin Spice Muffins

1 box cake mix
1 large can pumpkin puree


Bake at 375 for about 30 mins in a lined muffin tin or non-stick bread pan. Can also make as pumpkin bars in an 8x8 pan.

TIPS:
Pumpkie pie puree already has spices in it, and using this with spice cake mix is a great fall treat. Tastes spicy and delish!
Pumpkin puree that is PLAIN is bland. You can create new flavors with it. Choose a confetti cake mix for "birthday cake" muffins. Add red velvet for healthy red velvet cupcakes, etc. You get the idea! Have fun! These are amazing with a fresh cup of coffee or tea!
Also, these have roughly 130 calories in them. :) You can add sugar free cake mix, too. That might help a little.

    I've mixed fat free/sugar free pudding with cake mix before and it was pretty good!

    You can do it with pretty much any flavor =)

    It's just pudding, cake mix and milk. It comes out very moist.

    I made this the other night with carrot cake mix and pumpkin. It made 18 muffins at 100 calories a piece.

    I tried this with some Halloween confetti cake mix we had and they turned out awesome! Even my nieces and nephew thought they were delicious and nearly ate them all, lol! :laugh:

    Luckily I still have a can of pumpkin left and I'm going to try it with some chocolate cake mix! :smile:

  • Chocolate cake mix tasted a little funny when I tried it BUT I used the pumpkin puree with spices already in it. Do plain pumpkin and some dark chocolate chips! YUM
