I like this recipe, it's simple and very delicious, something like quiche. You have to make sure the veggies are cooked quite crisp tender, though, not too crisp.
Au Gratin Cabbage
2 cups shredded cabbage ½ cup grated carrot ¼ cup chopped green onions 1 egg ½ cup milk 3 tbsp shredded Swiss cheese ¼ tsp seasoned salt 1 tbsp minced parsley 1 tbsp shredded Parmesan cheese 1. In a large skillet coated with cooking spray, saute the cabbage, carrot and onions for 5 – 7 minutes or until crisp tender. Transfer to a greased, shallow 1 quart baking dish. 2. In a bowl, combine the egg, milk, Swiss cheese and seasoned salt. Pour over the vegetables. Sprinkle with the parsley and Parmesan cheese. 3. Bake, uncovered, at 350 degrees for 30 – 35 minutes or until a knife inserted in the center comes out clean (maybe 45 minutes if necessary). Yield – two servings Calorie count for ¾ cup is listed at 126 when using whole milk.
