Quinoa Salad! VERY easy.
What you need:
1 cup dry quinoa
1/2 chopped carrots
3/4 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped green onion
1/2 cup green/red peppers (optional)
Directions:
Step 1: Place 1 cup quinoa and 2 cups water in a 1 1/2 quart saucepan and bring to a boil. Reduce to simmer, cover and cook until all water is absorbed (10-15 minutes).
Step 2: While quinoa is cooking chop up your carrots, celery, onion, green onion and peppers.
Step 3: When quinoa is done cooking add in your vegetables and mix them in.
Serve cold or warm.

You can add almost any kind of fresh spice or seasoning to this to kick it up a notch in flavor without adding calories.0

I'm going to expand on this a little, though it already sounds very good.
Once made, take the mixture and stuff into a couple of bell peppers, sprinkle on a little mozzarella cheese, and bake. I also suggest cooking the quinoa in unsalted chicken or vegetable stock instead of water for a low cal flavor boost.0 -
