Pumpkin & Oatmeal Raisin Cake

1 cup pumpkin, steamed and mashed
2 tbsp applesauce
1 cup soft brown sugar
2 tbsp honey
2 eggs
1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
2 1/2 cups medium oatmeal
1 1/2 cups raisins

Mix together the pumpkin, applesauce, sugar and honey. Beat in the eggs, one by one. Stir in the flour, baking soda and spices then add the oatmeal and raisins. Mix together until well combined then spread mixture into a foil-lined tin.

Bake at 200 degrees C for about 10 minutes. Turn out onto a cooling rack and prepare your icing:

200g icing sugar
3 tbsp lemon juice

Add the lemon juice to sifted icing sugar and stir until you get a slightly runny icing. Spoon it onto the cake. Slice into 24 squares.
