While at work I have been trying to add in a few exercises like leg squats. I will do 25 squats and then go back to work. Later in the day I will do step-ups, 25 each leg. While i am not exercising constantly for 20-30 mintues, do I add these into my daily exercise? There doesn't seem to be an option of adding these little boosts of exercise and i was curious as to if anyone else does these and how do you count the calories burned?

Stuff like that you can add individually under strength training. They count! There won't be a calorie burn noted, but resistance training (which is what those types of exercises are) burns calories differently than cardio.

The calorie burn would be too minimal to worry about but you can always add them as 0 calories if you like to keep track of what you've done.
