Roasted Red Pepper Soup.... Yummy

OK, I made this last night and it was not great, but after sitting overnight.... wow!

6 roasted red peppers
1 cup of chicken stock
1. crushed head of garlic.... or 1 roasted head
1 TBS onion powder
1 TBS Itailian dried herbs
1 can of stewed tomatoes
3 TBS ketchup
3 TBS half and half
salt and pepper to taste

Put it all in a food processor and puree til your desired smoothness. Put in the fridge overnight. Heat and eat the next day..... You can surely eat it the same time you make it, but I really mean it when I say it was much better by sitting overnight. I didn't measure it, but I would say this made about 3 cups..... and I ate ALL of it at about 11 AM today.... :)

    Did you roast your own peppers? Sounds great, I love soups! I've found there are lots of recipes that are better the next day, when all the ingredients have had time to mash

    Yes, I roasted all my peppers.... I actually roasted about 20 of them.
