Yummy, Low Calorie Blueberry Muffins Recipe

Ingredients
-1 cup whole wheat flour
-1 cup oats (old fashioned)
-1 teaspoon baking soda
-1/2 teaspoon salt (I used sea salt)
-1 teaspoon cinnamon
-1/2 cup sugar free applesauce
-2 egg whites
-1/2 cup Splenda (artificial sweetener)
-1/2 cup water
-1 cup blueberries frozen (You could replace with fresh, I stuck to frozen)
Directions
1. Spray 12 cup muffin tin and preheat oven to 350.
2. Mix flour, oats, soda, cinnamon and salt together.
3. Add applesauce, sugar egg whites and water, mix until just blended.
4. Add in blueberries.
5. Scoop into muffin pans. I used an ice cream scoop and that did it pretty even.
6. Bake for 20-25 minutes or until tops have lightly browned. You can stick a toothpick in the middle and check too.
Tips:
-When it comes to the muffin tin, you can spray or use muffin cups. I used paper muffin cups and it stuck pretty badly after cooked. I think using the tin muffin cups will help.
-Also don't eat right after they get out of the oven. When I did, I thought they weren't very good. Wait until they are cooled.
-I also store these in a freezer bag, in the freezer.. That way I can have one whenever I please. You just pop it in the microwave on defrost for about 30 seconds and bam, delish!!
-And don't worry the batter is not smooth like it is when it comes in the box. It is rather chunky with all the oats in it.
-If you use paper muffin cups the bottoms may become a little wet. Do not worry this does not hurt anything, it's from the blueberries.
