Quick Pasta and Lentils

1/2 onion chopped
1-[1/2 cloves garlic, minced
1 TB olive oil
1/2 (190z) can lentil soup
1/2 cup crushed tomatoes
1/2 (10oz) package frozen chopped spinach
1/2 (16 oz) package ditalini pasta
ground black pepper to taste
1/2 pinch crushed red pepper
1 tb grated parmesan cheese


Brown onion and garlic in oil over med. heat. Stir in lentil soup and tomatoes. Bring to a boil. Sitr in spinach and spices. Simmer.

Meanwhile, cook pasta in a large pot of boiling salted water until almost done. Drain. Mix pasta into lentil sauce. Cover, and keep warm for 20 minutes. Serve wit hparmesan cheese.


Cal: 405 Fat: 7.1g Fiber: 15.5g

    mmm sounds good, I love lentil soups sounds like the way I make it (ingredients wise) but I use dry beans and it takes a bit longer...I'm gonna try it out!

    It should make about 3-4 servings.

    I saw this recipe a while back on Allrecipes.com and made it. I was surprised how YUMMY it was. The whole family loved it, even my husband who claims to hate lentils.

    Hello MFPers,

    Just some feedback on this delicious recipe...

    I doubled it and froze the individual portion amts in ziplock mini containers.

    Doubling the recipe makes 8 indiv. portions appx. 1 cup which includes topping.

    Just had it for lunch and let me tell YOU it was even better than freshly prepared!!

    What I like about this recipe is:

    Taste
    Protein
    Easy to Make
    Inexpensive

    Oh yeah and I used a bag of fresh spinach I didn't have frozen and I used ziti instead of ditalini.

    WOW that was delish!!! :tongue:
