Pineapple sweet and sour chicken

Sorry if this is a repeat. I made this for the first time last night and it was great! (My husband who doesn’t like peppers, mushrooms, onions or pineapple ate 2 servings last night. This morning he asked if we could have leftovers instead of me cooking an new meal tonight! :bigsmile: :bigsmile: )

1 can (20oz) of Dole Pineapple Chunks
2 tablespoon vegetable oil (I used extra virgin olive oil)
1 medium green or red bell pepper, cut in to chunks
1 medium onion, cut into chunks
1/2 cup mushroom, sliced
1 pound boneless, skinless chicken, cut into 1-inch pieces
1 cup sweet and sour sauce
2 tablespoons less sodium soy sauce

Drain pineapple and reserve 2 tablespoons of juice
Heat oil in a large skillet and add pepper, onions and mushroom, cook until veggies are tender.
Remove from skillet and set aside
Cook chicken same skillet until chicken in browned and cook through.
Add veggies back to skilled with sweet and sour sauce, soy sauce, pineapple chunks and reserved juice. Heat though. Serve with rice.

    1/6 of the recipe. it says "serves 6" then states the info for each serving

    The recipe didn't state how many cups or ounces a service size was. So I dished out 1/6 of what was in the skillet. I tracked 1 and 1/2 servings in my food diary because I'm really bad at estimating the serving side, so I just rounded up.
