Calling all vegans!

I haven't eaten meat for twenty-five years but I tend to eat a lot of dairy (I love cheese!). I am thinking of (not definite yet) sticking to a vegan diet for three or four days per week so I am a bit healthier and leaner!

I am posting here to ask for some really simple recipes. Breakfast ideas would be great- I live on Eggs / toast for breakfast! I don't like the idea of fruit for breakfast (I prefer a savoury breakfast).

Any ideas would be greatly appreciated! :-)

    Hey! Vegetarian here trying to eat raw. I recently posted this Pumpkin Chia Pudding recipe in the recipe section. I eat this for breakfast and it's very satisfying. Try it.

    1/2 cup pumpkin puree
    3 tbsp chia seeds
    1/2 almond milk + extra almond milk
    Stevia to taste (I put a little bit of maple syrup instead)
    1 tsp cinnamon
    Dash nutmeg

    Mix all ingredients together. Wait for it to gel, stirring every few moments. As you go, eyeball it to see how much extra almond milk it needs. It may need a few tablespoons; it may need 1/3 cup more. It’s hard to predict! As soon as the texture matches what you like, the pudding is ready to serve. Add in some berries or any fruits you like.

    I do smoothies through the week after my workout. I have a bunch of different ones that incorporate greens, fruits, and Vega Protein powder. One the weekends I love to make "skillets." They have tempeh, beans, potatoes, tomatoes, onions, peppers, etc.

    I eat oatmeal almost everyday, but you could make something with potatoes, rice, tofu scramble, pancakes, there are plenty of things out there :) Also add me if you like, I'm always looking for more vegan/plant based friends. I have been eating this way (besides a tiny bit of honey) for a little over a year and love it, I like to study nutrition info in my free time. I do it for my health, animals, and environment. There are also a couple vegan groups on here if you haven't seen them yet.

    tofu scrambles are great egg alternatives. Toast/bread is typically vegan. oatmeal is a good choice as far as breakfast.

    What about quinoa flakes? A slightly different texture from oatmeal and you can definitely do that in savory ways with herbs, etc.
  • Couscous mixed with your favourite veggies.

    You had me at breakfast burrito....that sounds awesome! lol

    I like to make a breakfast bruschetta recipe that I got from the Happy Herbivore meal plans. It's whole wheat toast topped with hummus mixed with a chopped green onion (i like garlic hummus) chopped spinach, chopped tomatoes on top and sprinkled with basil.

    Also you can do oatmeal but vary up what you put in it. Last week I had blueberries with cinnamon and some soy yougurt on top, it was awesome.

    I posted a recipe under happy herbivore group on here too-these chickpea frittatas are my #1 breakfast, I make a different one every week. today I made a sundried tomato-spinach-onion-garlic-field roast(grain meat)-and jack cheese(daiya brand) its so friggin good! little franks' red hot or low sodium salsa on top...im getting hungry
