This is one of the BEST recipes I've found!
2 boneless/skinless chicken breasts, cooked and shredded
1 cup frozen yellow sweet corn
1 can black beans, rinsed & drained
1 medium onion, chopped
1 lg. can whole tomatoes
2-3 cups chicken broth (varies by your desired consistency)
2 tbsp cilantro - fresh, chopped
2 cloves garlic, smashed
Juice of 1 lime
2 tsp cumin
2 tsp chili powder
1 can green chiles
1/2-1 cup Chili sauce (can be made in advance, recipe below, the more the spicier!)
1 dash sea salt
1 dash fresh black pepper
Throw all the above in the crock pot on low, simmer for 4-5 hours. Makes about 6 servings - best served with a bit of sour cream and diced avocados on top.
HOT Chili sauce:
1 cup water
12-20 dried red chili peppers, stems removed
1 can tomato paste (6 oz)
2 cloves garlic, smashed
hint of salt
Combine water and chiles in a saucepan, bring to boil, reduce heat, simmer for 5 minutes. Add paste, garlic, and salt, simmer for an additional 5-10 mins. Remove from heat, allow mixture to stand for 5 minutes, then place in blender or processer and blend until a smooth, spaghetti-sauce texture is reached.
Warning: this stuff is HOT

How odd!! I just put a recipe of this in the recipe section to see how the calories and sodium calculated. I got my recipe from Hungry Girl. My recipe calls for fajita seasoning . It is real good and is spicy!!! I don't remember how much the sodium was but was not as bad as I had thought it might be.0
