DEBI'S HOMEMADE CHICKEN PARMESAN
My Hubby is part Sicilian and loves his italian food. I used the recipe calculator at http://recipes.sparkpeople.com/recipe-calculator.asp to figure out the nutritional information for this recipe. It is yummy and if you want to make a special meal then this is a good one. You can make adjustments here and there according to what you want to use or to adjust some of the nutritional information. I added this into the database under DEBI'S HOMEMADE CHICKEN PARMESAN as 1 single chicken breast serving. I am adding the actual recipe below. Look it up in the database and you will have all of the nutritional information for it too.
SINGLE SERVING RECIPE
1 4OZ BONELESS SKINLESS CHICKEN BREAST
1/2 CUP OF PROGRESSO ITALIAN BREAD CRUMBS (YOU CAN USE LESS THAN THIS BUT I HAD TO AVERAGE IT)
1/4CUP LOW FAT SKIM MILK SHREDDED MOZARELLA CHEESE
5 TBSP SHREDDED PARMESAN CHEESE
1 CUP RAGU ORIGINAL SPAGHETTI SAUCE (give or take according to your preference)
***INSTEAD OF DIPPING MY CHICKEN IN EGG, I RINSE THE BREAST OFF BUT DON'T DRY IT***
Pound chicken out to about 1/4 inch
Rinse chicken breast but don't dry off
Coat Chicken with Bread crumbs
Place chicken in lightly oiled heated skillet over medium heat
Cook chicken for 7 minutes per side or until liquid runs clear
Remove chicken from pan and place on plate
Pour Ragu into skillet and bring to a boil
Let boil for 5 minutes and then reduce heat to medium low
Add chicken to sauce
top with Cheeses
Cover
Cook until Cheese is melted
Plate and serve with your favorite steamed or grilled veggie as a side dish
***I like to serve with green beans, Brussel sprouts, or grilled eggplant***
