I have bananas!

I have four nearly over-ripe bananas with which I would love to bake yummy things! Any ideas?

    I mash them up in my oatmeal. Bonus if you have peanut butter.

    Mash them with strawberries and a little almond milk (or regular milk) and freeze for a tasty frozen treat. (Or I like to do just bananas with a tiny bit of cocoa and peanut butter).

    Someone posted a recipe for Chunky Monkey Cookies that require 3 ripe bananas. I'm trying to make them today...I will go find the recipe :D

    Skinny Chunky Monkey Cookies Recipe:

    Ingredients:
    3 ripe bananas
    2 cups old-fashioned oats
    1/4 cup creamy peanut butter
    1/4 cup unsweetened cocoa powder
    1/3 cup unsweetened applesauce
    1 tsp. vanilla extract

    Directions:
    Preheat oven to 350°F. Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto ungreased cookie sheet. Bake 10-12 minutes.

    Freezing Directions:
    Cool completely, then place cookies in a freezer bag. Seal, label, and freeze.

    Nutritional Information (per cookie):
    47 calories; 7.5 g carbs; 1.6 g fat; 1.5 g protein; 1.3 g fiber; 1 WW PointsPlus

  • My breakfast every morning is a smoothie with almond milk, protein powder (usually chocolate) and some frozen fruit, like straberries, raspberries or banana.
    I cut the bananas in slices and freeze them on a baking sheet, store them in a container and keep them in the freezer. I use them as I need them.
    I buyall my fruit fresh and freeze them that way. It is chesper than buying them frozen in bags, and they taste better.
