Gosh, there's probably so many but 1 I love is just a simple chicken casserole.
I cook chicken breast, cut into chunks. I saute (with the teeny tiniest amount of EVOO) onions, steam broccoli and cauliflower and then mix all 4 with a cheese soup mix. Then I top with bread crumbs (or a box of stuffing). I prepare in morning when I still have time/energy and cook at 350 for 30-40 minutes.0 -
I take chicken strips, cook in a skillet until done in a small amount of water. After done I simmer in salsa for about 10 to 15 minutes. then melt a little mozzarella cheese on top. Or instead of salsa I sometimes use diced tomatoes or rotel original with the cheese.0

Awesome chineese "fried" rice, that y'all should definately try!!! Can be made with chicken.
ingredients; uncle bens, instant brown rice, 2 cups dry. 3 large eggs, 1 onion-chopped, one package of frozen snow pea pods, 1 can of sweet peas, 1/4-1/3 cups of oyster sauce to taste. 1/3 cup of soy sauce, more or less to taste. baby shrimp (optional), and I used some left over deer steak I had, and cut up into strips/pieces. First, cook rice according to box, I used a large skillet to boil. In a separate pan, spray with cooking spray and sautee onions, leaving a little crunchy. Push onions to side after cooking, and add 3 eggs and scramble until cooked through. Once rice is done cooking, add all other ingredients, including the eggs and onions, veggies, meat and oyster sauce, and soy sauce. Once heated throughout, serve. This recipe makes quite a bit, so perfect for lunch the next day, or several days, depending on how many you have to feed. My kids absolutely loved it!!! I added some cayenne pepper to mine, since I love spicy food. Also cayenne is known to boost metabolism. You can add or subtract whatever meat and veggies you like! Waterchestnuts would have been yummy in this, but I didn't have any! Enjoy!!!0 -

I actually made this today and it was wonderful...my hubby (who isn't working to lose weight and is tired of me cooking low cal foods) liked it! I've made a lot of things from this website and their always a hit!

Where to start? Chicken piccata, chicken Marsala. Chicken with pesto and peas, chicken in a sun dried tomato cream sauce, baked chicken Parmesan, a simple chicken cutlet topped with an arugula salad. One of my very simple, go to dinners is to dredge chicken breast in flour and sauté. Then remove from the pan and add about half a bottle of lee & Perrins chicken marinade (the whorchesire sauce people...it comes in a green bottle). The sauce almost instantly marries with the residual flour in the pan and reduces quickly, just pour it over the top of your boneless chicken breasts.
Anyway, I have a million of em. We eat a lot of chicken in my house. Kelly.0 -
One oven recipe is marinating chicken with plain yogurt and garlic salt and pepper...instead of mayo as some use. It's tasty and I've done that to turkey also. Baste and make with veggies on the side....
Or chicken tacos with the fixings! Ground chicken

thank you i am going to try alot of these.. i just find it hard to stick to low carb low calories and just eating chicken for meat.. i am on a 1400 calorie diet so i try to stick to 300 calories a meal it gets hard to do sometimes with out eating the same thing over and over.. thank you0

this recipe was very tasty. I used ground turkey. If you read through it also gives suggestions on switching out the cheese and veggies with others if you don't like what the recipe calls for.
