Low Fat & Low Sugar Morning Glory Muffins
• Prep Time: 25 mins
• Total Time: 50 mins
• Yield: 20 muffins
Ingredients
◦ 2/3 cup chopped pecans OR walnuts OR Unsalted sunflower seeds
◦ 2 1/4 cups unbleached flour
◦ 2 teaspoons baking powder
◦ 1 teaspoon baking soda
◦ 3/4 teaspoon salt
◦ 1 1/2 teaspoons cinnamon
◦ 2 eggs
◦ 3 tablespoons oil
◦ 1 1/2 cup grated carrots (I use a MicroPlane grater for better blending & texture)
◦ 3/4 cup unsweetened applesauce
◦ 1/3 cup Truvia Baking Blend
◦ 3/4 cup orange juice
◦ 2 teaspoons vanilla
◦ 3/4 cup raisins
Directions
1. Combine dry ingredients (flour through cinnamon) in large bowl.
2. Whisk together egg and oil till smooth in medium bowl.
3. Add all remaining ingredients (except raisins) and whisk till blended.
4. Stir in raisins.
5. Add wet ingredients to flour mixture, and whisk just until combined.
6. Lightly grease muffin cups with folded paper towel
7. Divide batter among 18 sprayed or lined muffin cups, filling cups nearly full.
8. Bake at 375°F until muffins have risen slightly and are golden brown, 25-30 minutes.
9. Serve warm, refrigerate, or freeze.
