Favorite spaghetti squash recipe

Hey everyone! I always want to use spaghetti squash in place of pasta, but I get really tired of the same dishes over and over again. Soooo, I figured this could be a good place to share your favorite spaghetti squash recipes! Mine I did the other night with just stuff in my fridge! Spaghetti squash alfredo:
1/2 spaghetti squash baked
1/4 red onion
1 cup mushrooms
1 cup chopped broccoli
2 cloves garlic
2-3 tbs olive oil
1 cup plain greek yogurt
1/4 cup sour cream (light or regular)
1/4 cup grated parmesan
season to taste (sub lemon juice for salt if wanted)
Bake the squash (after gutting it!!) in a shallow baking dish with a layer of water at 325F for about 15 minutes and use a fork to scrape up the meat. Meanwhile, saute all vegetables and garlic in olive oil on medium heat. Once cooked to desired "crunchyness", lower hear to low and add the remaining ingredients stirring well. Add in cooked and "forked" spaghetti squash and enjoy!
I've thought about adding kale or spinach (mainly because I'm slightly obsessed with them) and sauteing them with the vegetables. Looking forward to hearing your favorite recipe! Cheers!
