Cauliflower Frittata

So I had some leftover riced cauliflower in the fridge and wanted to get rid of it. But I also wanted eggs, so I started brainstorming. After several ideas (which I will try later!) it came to me...FRITTATA!!

2 cups of riced cauliflower
2 eggs
2T shredded Parmesan cheese
1/4 cup of shredded mozzarella
1 baby bella mushroom
2 broccoli florets, chopped
1/4 chopped orange bell pepper
1/2tsp red pepper flakes
1T Basil
Salt to taste

I took the riced cauliflower and warmed it a bit in the microwave.

Then added in an egg (I later added the second after the first didn't give me the desired consistency) and the parmesan cheese, red pepper flakes, basil, and salt. Mixed well.

I added in the mozzarella cheese, the broccoli, the bell pepper, and the mushroom.

I put it in a small pan (I removed the handle prior) coated lightly with oil and pressed down firmly to remove air pockets.

Then I put it in a 400F pre-heated oven for 30 minutes.

This is enough for two here for breakfast, or one big snack. That's a fullsize dinner plate.

Next time I will probably add cheese to the top to get a nice golden crispy layer.

    I used tomatoes and onions in mine with some cheese, the eggs of course, garlic powder, onion powder and hot sauce :)

    That sounds delicious!! I had just used whatever I had on hand that was getting ready to go bad and unfortunately all my tomatoes were a few days past ripe. :grumble:

    You're welcome! Glad you liked it!! It is a very cheap (money and calorie-wise) meal and VERY filling! The best part is that the veggie/meat combinations are endless and you can tailor it to your specific tastes. :smile:

    It's cauliflower put through a food processor until it has a rice-like texture.
