Breakfast to go (I love my rice cooker)

I have to be out the door for work at 5 a.m. - which means preparing a healthy breakfast before work doesn't happen. Recently, I've started making this, and packing it to go (usually eating it when I get hungry around 7).

You need:
- a rice cooker
- 1/2 cup steel cut oats
- 1 cup water
- 1 medium apple, cut into tiny cubes
- a pinch of cinnamon

Put all the ingredients in the rice cooker the night before, and wake up to find breakfast made.
Sometimes I add flax seeds, sometimes honey, you could switch up the fruit... this can be re-worked in so many ways.

YUM!! I have a cheap rice cooker, I wonder if it will still work. I have heard of making crock pot oatmeal the night before too. Oatmeal also freezes well, you can make little discs in a silicone mold and pop them out into a baggy to take to work.

Do you put water in there at all, or just the apple?
Also, (might be a stupid question) are you starting it at night and just letting it stay on warm all night, or do you start it in the morning?
  • Oh yeah, I put 1 cup water in too (original post now updated).
And I start it at night because I try to have as little as possible to do in the morning... all in all it takes about 15 minutes to cook.

I'll have to try it out. Sounds super good, thanks!
